Banana bacon!

Ingredients:

2 very ripe banana peels (soaked for approx. 2hrs in boiling water) 1 tbsp soy sauce 1 tbsp maple syrup ½ tsp smoked paprika and cumin ½ tsp garlic powder

1 tsp olive oil


Procedure:

1.Mix the ingredients together and marinade the peels for 10 mins

2.Heat the oil in a large skillet or frying pan over medium heat.

3.Add the peels and fry a couple of minutes per side, until they are golden and bubble. (It may get a little smoky as the sugars will burn so make sure to turn on the fan!)

4.Remove from pan and drain on paper towel. They should get crispier as they cool.

Serve in a sandwich, or alternatively shred the banana peel with a fork to create ‘pulled pork’.
